Our Papua New Guinea Natural Arusha comes from a remote, lush corner of the Western Highlands — a mountainous region of Papua New Guinea where the air is cool, the land is fertile, and coffee farming has been a way of life for generations. This coffee isn't from a single farm — it's the result of roughly 1,500 small family farmers across the Kindeng and Arufa communities, each tending plots about the size of a couple of backyard lots. Together, they bring their harvested coffee to the Kindeng Mill, where the lots are carefully blended and prepared for export.

Think of it as a neighborhood project. No single producer could make this coffee alone, but together they create something that earns a place on the shelves of specialty roasters like us.

How It's Made (and Why It Matters)

Here's where it gets interesting. This is what's called a "natural process" coffee — which basically means the coffee fruit is left whole and dried in the sun, rather than being wet milled right away. The beans slowly absorb all the natural sugars from the fruit over about a month of drying, while workers turn them by hand every day to make sure everything dries evenly.

That extra time and care is why natural process coffees taste so different from what most people are used to. The result is a cup that's rich, fruity, and full-bodied — more like sipping something than drinking it.

What Does It Actually Taste Like?

This is the fun part. The flavor notes on this coffee are: cooked cranberry, dried lavender, and a mellow sweetness with a slightly wine-like kick.

In plain terms? It's smooth and a little indulgent. There's a deep berry quality — not tart or sharp, but warm and jammy, like a fruit preserve.
